Birch is hands down the best restaurant in Sheridan. The revolving menu features creative, beautiful, and tasty dishes. The staff is friendly, prompt, and experienced. Indoor and outdoor seating are both nice. Prices are only slightly more than comparable restaurants in town, and the food is in another league altogether. My only critique is that I wish they were still open for lunch.

EDIT: I've updated my review because things have changed at Birch recently. The head chef opened a new restaurant, leaving other people in charge of dinner service, which has noticeably changed the quality of what Birch is offering. We used to get Birch burgers to go every Tuesday, and they were always incredible: fresh buns, beautifully crispy shoestring fries, burger patties still pink inside. Then one Tuesday, our burger buns were ROCK SOLID STALE. Stale all the way through. I complained to one of the owners, who said she would make me new ones sometime, but that never materialized. We decided to give them another chance a week or two later, and it was almost as bad. Burgers were way overcooked, almost hard. The fries were soggy and barely fried. What a huge disappointment. We decided to never do the burger deal again after that. I've gone back for dinner two times or so since then and it's been very meh. My mother had to send back her fish because it was *completely* uncooked inside. It was remade correctly, but honestly, I didn't really enjoy anything I got except for the soup. Their soup is always wonderful. Old review starts here. *** Birch is a gem in Sheridan. We can't afford to eat here often (unless it's Tuesday burger special—we can't get enough!) but we always go to Birch on special occasions. I love most everything they make, and they're always trying out new things beyond the same boring meat and potatoes stuff most people here seem to prefer. We love their cocktails too, which are exciting and unique. I'm not always a fan of their pork belly, it can be kind of tough and chewy, but it improved a lot at the last tasting dinner so I'm looking forward to trying it again! Great food in reasonable portion sizes for people with normal appetites. :)
