        If the kitchen is busy, the sampler isn't available. It's just as well though as the brisket that you CAN get is dry and flavorless. No hint of smoke flavor, and in dire need of the sauce to make it palatable. I assume it's cooked once a day, early, and then "kept warm for the rest of the day, resulting in a dry greasy presentation late in the day.
