listen i know this is a nicer version of blaze pizza but this was legit the best pizza we've both ever had. we built our own and added ricotta in addition to the regular marinara as well as truffle honey and they made a world of difference. i'm still dreaming about this pizza, honestly. they took the st kate arts hotel food credit that you can get from expedia/other travel site bookings so it was free for us. will so be back next time i'm in milwaukee

We have tried the other food venues at the St. Kate and like them. This was the first time that we ate at Proof. Got nice welcome by the staff and an explanation of the food options, and the process. Ordered a couple of small pizzas. Waited for about 20 mins and the pager/buzzer went off. Both pizzas were fresh, hot and flavorful. However, it was under cooked. Crust was good, the middle was not. Other reviews have complained about the pizza being soggy. It was horrible, but could have been better. I would try again and ask that it be done more. Took the pizzas to the bar area and got to listen to an amazing jazz/pop ensemble. Overall, it was a good experience.

The pizza was delicious! The daughter and I shared a Proof special pizza and the antipasta salad. There is so much flavor and very decently priced. They are accessible. However, seating is very difficult and very limited. The restaurant is a walk-up, first come, first served counter service, but you can place an order with the wait staff in the small dining area. The dining area is more of a lounge for St. Kate's hotel. A few very small tables were occupied, and couches with small, short coffee tables. We ate with our plates on our laps. They had live music which was nice, but it was very loud with the people trying to talk over the music. We were here on Friday around 5:00 pm. Wheelchair accessibility: There is a ramp located outside the entrance to Proof pizza. There are also ramps inside the dining/lounge area to access the various levels. It was difficult for my daughter to eat her meal on her lap.
