        The only pizzeria in Bethlehem that still makes the perfect pizza - as good as it was 40 years ago The oven is at the right temp. The hands making the dough are the hands of a pizzaola, who understands the science of such a seemingly simple thing to make. The crust is perfectly balanced, chewy and crisp, bubbles airy, unlike the majority of pizza places that take short cuts and don't use quality ingredients,,and often keep oven temps too low to make a good pie. The tomatoes must be San Marzano, as they should be, for that fresh and fruity sauce - and not too much - against the perfectly stringy and chewy mozz, creating that perfect harmony of artistry. The closest I've found to Joe's Pizza, NY
