Rosa's Mexican Restaurant

We had a fabulous lunch today at Rosa's Mexican Restaurant. I had the Enchiladas and they were perfect. Two Corn Tortillas stuffed with succulent Chile Colorado,Sour Cream, and Lettuce then covered with delectable White Sauce and Spanish Rice, Beans, and a small Salad on the side. My husband had the Crisp Tortilla Bowl that is layered with Beans,Fresh Lettuce,Cheese,Tomatoes,Onions,Guacamole, Sour Cream, and Chile Colarado. My mother in law had the Taco Tuesday Special that was two Corn Tortillas,Onions, Tomatoes, Fresh Cilantro, Cheese, and Chicken. Rice and Beans were included on the side. Fresh Tortilla Chips and Fresh Salsa were brought to the table and they both were excellent. Our waiter was very kind and gave us great customer service. We can't wait to go back.

The food was bland. We had the bean dip which tasted just like the beans, again bland. The salsa was uneventful, and the fajitas not worth the money. Understaffed during spring break. Long wait. Overall disappointing.

Hidden little gem has been overused to describe restaurants or shops in communities communities of all sizes but especially smaller towns. As much as I try to avoid that verbage, I can't. Rosa's is truly a hidden little gem. I have not had anything that disappointed. The chips and salsa set the tone for a great, flavorful, and authentic experience. If you like guacamole, make sure you do not pass on it to accompany your chips.
