Regarding the palmiers, we have added whole grains to our recipe because we love the flavor and nutrition boosts, but it does decrease the flakiness somewhat. Regarding our staffing situation, we have not just hired many young bakers and we do not have a strategic plan to hire young or inexperienced people in order to decrease our payroll. Whenever possible we hire experienced bakers. When this isn't possible we train internally, starting with the simplest work, and we have done this since the bakery opened in 1992. We want to assure you that we have many long term staff who are celebrating 5, 10 and 15 years with us.
