        Found this market and his wonderful owner at the Waimea Market today. Owner is a wealth of knowledge in preparing each type of fish. He had several fish to choose from and happy to describe texture etc to us. A plus for us is that his poke is gluten free. He even gave us an education on different types of tamari. not all are gluten free as I had thought. Ceviche and poke really amazing for lunch and cant wait to try the Maunchon fish for dinner!

        We went twice and prepared the meals. Everything was really fresh. We did a pan sear with the sailfish, steamed the walu with a slight sear on the bottom. The lehi was also superb. It was expensive but worth it.
