Castle Rock

My husband and I have been wanting to try this place and finally got an opportunity so we swung on by. We ordered the cactus blossom for our appetizer and it was excellent. The onion slices were a bit thinly sliced in my opinion but the execution and flavor were great. The sauce is on another level. It's honestly superb. The slight hints of sage in there were a fantastic touch. The palate of the chef is a refined one for sure with the little touches and attention to flavor profiles. We chose the fish plate for our entrees. The pieces of fish were around 2in thick and 3-4in long. They were nice thick, chunky pieces of fish. Very moist yet well cooked and the batter on the outside was golden and crunchy. I'm not typically a fan of tartar sauce but this one yet again had a nice attention to detail with flavor profiles. It has a nice dill note to it. The entree comes with cactus slaw and fries and choice of soup or salad. The slaw was a very nice rendition on your normal slaw. If I'm picking out the flavors correctly it's a broccoli slaw with a vinegrette dressing that has a slight berry note to it. Not too sweet or acidic by any means, very balanced with a bit of spice to it as well. The fries were very good, well flavored and crunchy. The side salad was great. A mix of greens and chopped tomato, red onion and a soft cheese, maybe feta, on top. We ordered the cheesecake to take home. It was superb. Very rich and creamy and the cherries jubilee on top balanced that out very well. Overall I have to say we were very pleasantly surprised with our experience here. The staff were welcoming and warm. The atmosphere was good. The views are, as we all know, spectacular here and they have a very nice vantage point to see them. The food was great and the prices are also very reasonable. The attention to flavor profiles in the sauces was, from my experience, unmatched for this area. I haven't found another restaurant in this area that has such flavorful and artfully crafted food. I am eagerly looking forward to our next trip and trying out their steaks. Thanks for the great meal!
